The heart of the restaurant has a name and a story: Rosy, the cook who has been with the Villas since the very beginning. Her journey mirrors the hotel’s own evolution from a family kitchen to refined gastronomy, without ever losing affection or natural ease. Rosy masters the rare art of balancing the simple and the sophisticated. She improvises according to guests’ wishes, translates recipes from around the world using ingredients from the surrounding region, and preserves, in every preparation, the essence of Bahia… dendê, coconut, cashews, and the memory of dishes once made on a clay stove.

Breakfast

Day at the Villas begins at 8:00 a.m., with a complete, varied, and serene breakfast, setting the pace for the day. Coffee is brewed to order and served at the table, alongside seasonal tropical fruits and juices. At the buffet, you’ll find a variety of breads, cakes, and different treats prepared by hand right here at the hotel. For those looking for a lighter choice, there is an assortment of cereals, dried fruits, nuts, and cold cuts, as well as a fitness corner with vegan, gluten-free, and lactose-free options. Guests can also order à la carte, including warm dishes such as tapiocas and omelets.

Bahian Banquet

The Bahian Banquet is an experience designed for those who want to gather with special people and dive into the flavors of the coast. Classics such as crab cakes (casquinha de siri), mixed moqueca, shrimp baked in pumpkin (camarão na moranga), and roasted fish are served, as Brazilian tradition has it, with white rice, farofa (toasted manioc flour*), pirão (cassava porridge), vinagrette, fresh salad, and all the spices you like. And to finish with Bahian sweetness, a selection of cocadas (coconut candy) for dessert. The result is an abundant, intense feast with the unmistakable spirit of Brazil. One that turns a meal into a celebration.
